From Priorat, Catalonia, Spain, these olives are selected by hand and then naturally cured with water, salt and herbs to produce a pleasantly meaty olive with a soft texture. The Arbequina olives are cured 3-4 months and are tiny but bursting with a nutty, buttery flavor.
