Mycryo Cocoa Butter

Cocoa butter is a noble fat product with a neutral flavour; it is a 100% vegetable fat that is obtained by pressing roasted and ground cocoa beans. It is solid at room temperature and melts at 35°C. In order to facilitate the use of cocoa butter and to allow artisans to benefit from its remarkable properties, Cacao Barry has come up with the idea of transforming it into a dry powder which preserves the original qualities of the butter.
