European Soldier Beans
European Soldier (Phaseolus Vulgaris) also known as red eyes, are about 3/4 inch long. It is distinguished by the splashes of color surrounding the hilum or eye of the bean which suggest the silhouette of a soldier. This variety is grown in the cooler climates of the northern U.S. The European Soldier bean has a mild flavor and firm texture.
