Cabrales DO (Asturias, Spain) Cow
This D.O. blue cheese is made in the artisan tradition by rural dairy farmers. It is made with cow's milk for roughly 9 months and then blended with cow, goat and sheep's milk for the remainder of the year. Cabrales is aged from 2-6 months in natural caves. It has a whiter, more compact texture when young. When mature, it darkens in color from grey to black with a dark blue vein and becomes less compact. It offers a sharp, spicy, "mean" flavor with a long finish.
